Shrove Tuesday Menu - Roast Chicken

Menu:
Roasted whole chicken seasoned with salt and pepper
Saffron Risotto *This recipe is pretty close to the one I use from the Time Life Italian Cook Book
Steamed Asparagus

Yup, that's what we had. But I didn't want everyone to eat all the chicken we had--some of that is "planned leftovers" since I bought the hugest chicken I could find. At 8 1/2 pounds it was almost a small turkey!

Wow! That is large. Leftover chicken doesn't work for us as my hubby raids the frig late at night and all that is left are drumsticks and the backs :-)
